How to build your own Miyako Monaka
A Modern Take on a Traditional Japanese Treat
Satisfy your creativity with this delightful DIY Japanese wafer and red bean sandwich, Miyako Monaka. Build your own traditional Japanese treat, combining sweetness, texture, and the joy of Japanese confectionery.
Miyako Monaka hails from Kyoto, where there is a vibrant scene of traditional Japanese confectionary manufacturers. Toshoan, established in 1953, specializes specifically in creating the best tasting “anko,” traditional Japanese red bean paste, by using natural spring water and high quality Hokkaido-grown Erimo azuki beans, and slowly simmering in a copper pot to develop a rich, deep flavor.

The unique, monaka wafer took a whole year of trial and error to develop its shape and texture. The resulting distinctive deep box shape is reminiscent of a jewelry box, allowing you to fill it with as much anko as your heart desires. The wafer is crisp and light, adding a touch of elegance to your tea time.
