Awa Bancha Sparkling Tea — Organic Fermented Tea from Tokushima

A Sparkling Expression of a Rare Japanese Fermented Tea

Organic Awa Bancha Sparkling Tea is a modern expression of one of Japan’s most traditional fermented teas. Grown and produced in the mountains of Tokushima, it begins as a deeply rooted local craft and is transformed into a light, sparkling drink made for the modern table. The result is a dry, refreshing tea with natural acidity, subtle complexity, and a clean, food-friendly finish.

What Makes Awa Bancha Different

Awa Bancha is a traditional post-fermented tea made from mature summer-harvested tea leaves. Once harvested, the leaves are boiled, rolled, packed tightly into wooden barrels, and left to ferment with lactic-acid bacteria. After fermentation, they are spread out and dried naturally in the sun.

The method differs from other familiar teas: green tea is heated to halt oxidation, while black and oolong teas develop their character through enzymatic oxidation. Awa Bancha, by contrast, is shaped by microbial fermentation, giving it its signature light acidity, earthy aroma, and smooth, low-bitterness profile.

Carrying a Tokushima Tradition Forward

This Awa Bancha is produced by Bando Shokuhin, a family-run farm in Tokushima with more than a century of tea-making history. They continue to grow the tea leaves organically, and the entire production process, from cultivation to fermentation and drying, is certified organic. Production still relies on wooden barrels, sun drying, and the judgment that comes from experience rather than industrial standardization. Many of the tea plants grow alongside citrus orchards, subtly influencing the character of the finished tea and giving it a fruit-like acidity.

Fermentation and Everyday Well-Being

Awa Bancha is naturally low in caffeine and has long been enjoyed as an everyday tea in Tokushima. Its lactic-acid fermentation has also drawn scientific interest, particularly for the lactic-acid bacteria and compounds created during fermentation. Some studies have suggested probiotic potential and other functional properties, leading to broader interest in Awa Bancha as a traditional wellness tea linked to longevity.

For Bando, however, its value begins with something more direct: a distinctive regional tea made with as little intervention as possible, from organically grown leaves and without unnecessary additives.

A Non-Alcoholic Sparkling Drink for the Modern Table

After the fermented tea is brewed, carbonation is added to give it its sparkle, brightening its natural acidity and lifting its fruit-forward aroma. The result sits somewhere between tea and a sparkling aperitif: dry, refreshing, and complex enough to accompany food without relying on sweetness.

Served well chilled in a wine glass, Organic Awa Bancha Sparkling Tea offers a distinctive non-alcoholic alternative to sparkling wine. It pairs especially well with rich dishes, fried foods, fermented foods, and seafood.

For Bando, bottling Awa Bancha is a way to share this increasingly rare Tokushima tradition beyond the region. From citrus-lined tea fields and wooden barrels to a sparkling glass at the table, it is an old craft finding a new way to be enjoyed.
