Noen is a group of young rice farmers based in Nanporo Town, Hokkaido—an area known as one of the largest rice-growing regions in the prefecture.
Formed in 2016, Noen was created with a simple belief: food tastes better when it is made with joy. Their Yumepirika pancake mix is a natural extension of that idea—rice grown with care, transformed into something new for everyday enjoyment.

The Rice — Yumepirika from the Farmers Themselves
This pancake mix is made with 100% Yumepirika rice grown in Nanporo by the farmers of Noen.
Known for its chewy texture, deep umami, and gentle sweetness, Yumepirika is one of Hokkaido’s most celebrated rice varieties. By milling their own rice into flour, the farmers preserve the rice’s natural nutrition while expanding how it can be enjoyed beyond the rice bowl.

Gluten-Free, Naturally Nourishing
Yumepirika rice flour is naturally gluten-free and retains the protein and vitamins found in whole rice.
It absorbs less oil than wheat flour, making it suitable for lighter cooking, and is gentle enough to be used for baby food as well. The rice flour in this set is designed to replace wheat flour or starch in a wide range of dishes—from pancakes and cookies to savory cooking.

The Pancake Mix — Crafted with Hokkaido Ingredients
The pancake mix blends Yumepirika rice flour with beet sugar and buttermilk powder, all sourced from Hokkaido.
After repeated tastings, the recipe was refined to achieve a soft, chewy texture, subtle sweetness, and a clear rice aroma. Supervised by Chef Oki—known for pioneering Sapporo’s shime parfait culture—the result is a pancake mix that feels both comforting and carefully balanced.

Farming with Purpose
For Noen, turning rice into flour is also a way to reduce food loss. Rice harvested earlier is milled rather than discarded, giving it new life as a versatile ingredient.
