Matcha Chocolate Rusk from Kyoto

Zenkashoin
Jyou-jyou is a signature sweet created by Zenkashoin in Kyoto’s Muromachi district. Inspired by the stone-paved streets and traditional townscape of Kyoto, this confection combines castella rusk with chocolate and Uji matcha to create a form and flavor unlike any other. It is a modern sweet rooted firmly in Kyoto’s culture and sensibility.

The Philosophy
Zenkashoin believes that new confections can grow from tradition without imitating the past.
By starting with castella — a classic Japanese sponge — and transforming it through careful baking and blending, they seek to express Kyoto’s elegance in a contemporary way. Jyou-jyou reflects this philosophy: familiar ingredients, reimagined through craftsmanship.
The Sweet
Castella is first baked into crisp rusks, then combined with chocolate and Kyoto-grown Uji matcha. The result is a cookie-like confection with a distinctive texture — lightly crisp, gently crumbly, and slowly melting on the tongue. The aroma of matcha unfolds gradually, followed by the quiet richness of chocolate. This layered experience is what has made Jyou-jyou a long-selling favorite.

Craftsmanship
Each piece is baked individually to preserve texture and fragrance. The process requires precise control so the rusk absorbs chocolate without losing its delicate structure. This balance — crisp yet tender, rich yet restrained — is achieved only through Zenkashoin’s original method and careful handwork.

Sharing and Gifting
Jyou-jyou is individually wrapped, making it easy to enjoy fresh at any time. Its playful, tatami-inspired design and long shelf life make it a popular choice for souvenirs and gifts. Whether for everyday enjoyment or special occasions, it is a sweet that quietly represents Zenkashoin’s world.
